Creamy Turkey & Veggie Soup (Copy)

The best parts of Thanksgiving is enjoying the delicious meals that come after the feast. Here is a cozy and delicious comfort soup made with your turkey leftovers. It’s simple, hearty, and the perfect way to savor your pasture-raised turkey all weekend long.

Ingredients:

  • 2 cups cooked turkey, shredded

  • 1 tbsp butter or olive oil

  • 1 onion, chopped

  • 2 carrots, chopped

  • 2 celery stalks, chopped

  • 2 cloves garlic, minced

  • 4 cups turkey or chicken broth

  • 1 cup milk or cream (optional for creaminess)

  • 1 cup leftover mashed potatoes or rice (optional for thickness)

  • Salt, pepper, and herbs (thyme or parsley are great)

Directions:

  1. In a large pot, sauté onion, carrots, and celery in butter or oil until tender.

  2. Add garlic and cook another minute.

  3. Stir in turkey and broth; bring to a simmer for 15–20 minutes.

  4. Add milk/cream and mashed potatoes or rice to thicken.
